Gluten Sensitivity vs. Celiac

Celiac disease is an autoimmune condition where gluten damages the small intestine. Non-celiac gluten sensitivity causes similar symptoms without the intestinal damage. Both are valid, and both benefit from avoiding gluten.

If you suspect celiac disease, get tested BEFORE going gluten-free. The tests only work if you're currently eating gluten.

  • Processed meats
  • Some medications and supplements
  • Lipstick and beauty products
  • Shared cooking surfaces and fryers

Naturally Gluten-Free Foods

  • Rice, quinoa, buckwheat, millet
  • All fruits and vegetables
  • Meat, fish, and eggs
  • Beans and legumes
  • Nuts and seeds
  • Dairy (plain, unflavored)

Focus on whole foods rather than gluten-free substitutes—many packaged GF products are highly processed. Your body (and wallet) will thank you.
